Santa\u2019s little helpers worked overtime to perfect this doubled mashed imperial stout. Santa found it so good that he decided that he would keep it in his secret personal stash for just himself and Mrs.Claus to enjoy by the fireside. Apparently, that would put him on his own naughty-list which would cause a logical paradox and that would endanger the entire concept of Christmas. In order to save the holidays from this logical conundrum Santa found it safest to release Santa\u2019s Secret Sauce to the public. All in the spirit of the holidays for all of us!<\/p>\n<\/div>\n\n\n\n

Mosiac was one of the first graphical web browsers, released in 1993 and produced by the NCSA. It is also a pattern of small coloured pieces making up an image. Mosaic is also the name of the hop that provides flavour and aroma profiles in beer that simply cannot be accomplished with other hop cultivars. A moose on the other hand is an elk. A Moosaic is the beer in your hand hopped with Mosaic with a mosaic picture of a moose<\/p>\n<\/div>\n<\/div>\n\n\n\n

Session IPAs date back to World War I when drinking on the job wasn\u2019t *ahem* considered problematic. Workers were allowed two 2-hour drinking sessions (4 hours) per workday. Now, for the average hophead, drinking a regular IPA would make you feel too drunk. This called for a full flavoured beer that wouldn\u2019t make workers too pissed. Our Pond Surfer is a hop forward, well-balanced summer-in-a-can Session NEIPA suitable all year round with fruity flavours from the hops and with a sessionable ABV<\/p>\n<\/div>\n\n\n\n

We teamed up with our friends from the Polish brewery, Browar Nepomucen to craft this smooth, juicy, hoppy double NEIPA brewed with one of our favourite hops Azacca. For some extra fun we poured in a dash of peaches and some blood oranges to add to the fruity tropical notes from the hops, giving it a lovingly kiss of peaches<\/p>\n<\/div>\n\n\n\n

As you might have deduced by our brewery name Hop Notch, we are quite fond of hops. We are also very intrigued by the elegance and balance of pale lager beers. In this hop-forward beer we have combined the aromatics of an American IPA with the crisp drinkability of a German- inspired Helles lager. This is what India Pale Lager\/ Hoppy Lager is all about. Quite Hell of a lager, if we might say so<\/p>\n<\/div>\n<\/div>\n\n\n\n

ELDERFLOWER POWER IPA<\/strong>
Sweden\u2019s history with Elderflower is almost mythical. In ancient times it was believed that Elderflower held magical properties. The whole plant was used for various purposes as during weddings for good luck, for protection and to ward off evil spirits. None of that is proven, but what is true is that it is a favourite flower of ours and that it matches the Citra hops like a charm in this West Coast IPA. We have wanted to do this beer for ages, and finally it has come true.<\/p>\n<\/div>\n\n\n\n

TALUS<\/strong> NE PA<\/strong>
In Greek mythology, Talus was a giant winged automaton made of bronze set to protect princess Europa in Crete from pirates and invaders. Talus\u2019 task was relatively simple: to run around Crete three times a day and hurling huge rocks at unwelcomed visitors or by heating himself up and giving them hot hugs setting them on fire.
Talus is the tribute name given to this new hop variety from the rocky slopes of the Pacific North West \u2013 and it\u2019s a lot catchier than \u201cExperimental Hop HBC692\u201d
The aroma of Talus hops has been described as a mix of tangerine peels, rose petals, grapefruit, stone fruit, oak, coconut, and spicy, woody pine notes. We agree<\/p>\n\n\n\n

BOOT PRINT 2023<\/strong>
For this years Boot Print brew we have taken inspiration from the last decade and brewed a New School West Coast IPA with the hops Loral, Ekuanot and HBC 586, creating a IPA with notes of citrus, herbs, wood, stone fruit and tropical fruit flavours.<\/p>\n\n\n\n

GRAPE DIEM<\/strong>
American West Coast IPAs are known for their citrusy hop punch, and we juiced this one up some extra with real grapefruit and orange peels for an added touch of citrusy goodness that amplifies the tropical fruit and citrus notes from the Idaho-7 hops. This IPA is a serious citrus bomb. Lively and bright, bracingly bitter with a fresh grapefruit aroma.<\/p>\n\n\n\n

BOOT PRINT 2022 CELEBRATION NEIPA<\/strong>
The last years have been rough for many, but we should be celebrating what we have achieved in the industry, as a network, as brewers and beer lovers.
This year we brewed a NEIPA with the hops HBC 630, Idaho Gem, Loral, Talus and Triumph, creating a blend with notes of bubblegum, citrus, pine and tropical fruits.<\/p>\n\n\n\n

RIWAKA NZ IPA<\/strong>
New Zeeland has always had a special place in my heart and the first time I tried NZ hops I was blown away. The pure decadence of these hops is hard not to love. It was then known as D Saaz, now its name is Riwaka. NZ hops is NOT cheap (none of the super aromatic hops are\u2026) but who cares when it is so indulging and mean something far from f***ing close to water?!

HOPOPOTAMUS IPA<\/strong><\/p>\n\n\n\n

The Hopopotamus is a friendly hop loving beast. Everytime we take inventories there is always bags of hops missing, and we know whom to blame\u2026 To please that beast we have dedicated our latest beer, a New-School West Caost IPA, to it.
West Coast IPAs are the hop-driven beers that powered the launch of the American craft beer industry, often brewed with the classic \u201c3C\u201d hops: Cascade, Columbus and Centennial. Beer styles are always evolving and this New School West Coast IPA is both flirting with the classic and the present contemporary hops. Displaying a bright and balanced bitterness with classic mid-palate grapefruit-pine character from the 3C, and with tropical yet crisp fruity flavours from Mosaic hops.<\/p>\n\n\n\n

NECTARON NZ IPA<\/strong><\/p>\n\n\n\n

Nectaron is a full sister to Waimea and daughter of Pacific Jade. Who said hops and brewing is not a sport for romantics! From the creator of Nelson Sauvin this hop variety was first bred in 2004 and passionately crafted by New Zealand\u2019s hop researchers for over 17 years, until it was finally released commercially in 2020. Nectaron has intense tropical, stone fruit, pineapple and citrus character. It made a huge splash in the brewing community and we are so lucky that we got hold of some to make this beer.<\/p>\n\n\n\n

CHILL PILL<\/strong><\/p>\n\n\n\n

Cold IPA isn\u2019t about the temperature you drink it or IPA \u201con the rocks\u201d. It\u2019s not to be confused with IPL, that is an IPA fermented cold as a lager. It is about process and ingredients that result in a unique beer that has a clean, crisp, light body that provides a great stage for the hops to really express their character. Brewed with adjuncts (gasp!) like rice and corn allows the beer to be dry without being naked and overly bitter. It\u2019s fermented warm with a clean fermenting lager yeast that allows the hops to shine without being muddled by any ale yeast aromas.
It\u2019s crisp and sessionable, but strong and sneaky. It\u2019s Cold IPA!<\/p>\n\n\n\n

HopSeven IPA<\/strong>
The hop Idaho-7 has rapidly risen to be one of the very sought after hops in the brewing world, and we are happy to have secured some for this, our newest hopcentric NEIPA. With the intensity of Citra and the depth of Mosaic, named after its home state, this late-maturing aroma hop practically drips with blond grapefruit, juicy tropical and stonefruits, supported by sticky pine and fainter notes of earthy black tea.
